Turkish chicken and okra or courgette casserole with lemon recipe details
Ingredients
2 tbsp | ghee |
4 | chicken legs, cut into 2 parts |
2 | onions, halved, then cut into slices |
3 clove(s) | garlic, minced |
1 tbsp | Kirmizi biber (or some fresh chillies) |
1 tbsp | coriander seed |
1 tbsp | oregano, dried |
1 tsp | sugar |
1 tbsp | tomato puree |
400 g | pureed tomatoes (tetra pack, or fresh) |
200 ml | water |
500 g | courgette, cut into matchsticks, or okra, leave them whole |
6 | potatoes, medium size, cut into big cubes |
1 | lemon, juice of |
salt and pepper | |
200 g | yoghurt |
1 handful | mint leaves, finely chopped |
Instructions
Mix yoghurt with salt, pepper and mint and serve with the stew.Heat up ghee and fry chicken pieces from all sides. Add onions and fry until they are translucent. Add garlic, kirmizi biber (or chilies), coriander, oregano, sugar, tomato puree and tomatoes and cook for a minute. Add hot water, stir, and bring to a boil. Cover pot with a lid and simmer for about 20 minutes, stir occasionally.
Add potatoes, bring to a boil, cover pot and simmer for 20 minutes.
Add courgettes or okras and lemon juice, stir well, season if necessary, and simmer for further 10 minutes.
Season to your taste, and serve with the yoghurt.
