Ingredients

1  Turkey carcass
3 tbsp oil
1  onion, finely chopped
2 clove(s) garlic, finely chopped or crushed
½ tsp tumeric
½ tsp ginger, ground
1 pinch(es) chillies, ground
1  chicken stock cube, organic
lemon juice
salt

Instructions

Remove the turkey skin and discard. Remove the remaining turkey meat and cut into chunks.

Heat the oil and fry the onion until soft but not brown. Add the garlic, taking care not to burn it. Add the turmeric, ginger and chillies and cook them until soft. This brings out their full flavour.

After a couple of minutes add the turkey meat. Stir well. Transfer to a stockpot together with the broken-up carcass. Cover with water and add the stock cube. Stir well, bring to the boil and simmer gently. Add a squeeze of lemon juice and salt to taste.

Simmer for at least one hour.

Remove the bones and serve with crusty French bread.
