Turkey breast roll recipe details
Ingredients
100 g | pine nuts, toasted |
2 clove(s) | garlic, minced |
300 g | spinach, stems removed, washed and spin dried |
150 ml | oil |
80 g | freshly grated Parmesan cheese |
salt and freshly ground black pepper | |
1 pinch(es) | sugar |
50 g | sundried tomatoes in oil, diced |
1 kg | turkey breast, boneless |
2 tbsp | lard |
300 ml | chicken stock |
Instructions
Place the spinach into a blender, add 100ml oil, half of the pine nuts and the garlic. Process until smooth and slowly add one after the other the remaining oil, the cheese and the remaining pine nuts. Season to taste with salt, sugar and pepper.Lay the turkey breast skin side down on a work surface and pound to an even thickness. Season with salt and pepper and spread the meat with 2/3 of the pesto. Divide the tomatoes on top. Roll up and tighten up with kitchen yarn. Season the outside with salt and pepper.
Preheat the oven to 150°C.
In a large pan, melt the lard. Fry the roll all around for 4-5 minutes. Place the roll into a buttered casserole dish and bake for 80-90 minutes, adding a dash of chicken stock or water from time to time.
Cut the roll into slices and serve together with the remaining pesto and pasta of your choice.
