Turkey and vegetable casserole with rice recipe details
Ingredients
100 g | long grain rice |
250 ml | vegetable stock |
500 g | turkey breast fillet |
2 tbsp | olive oil |
salt and pepper | |
1 | onion, chopped |
2 | zucchini |
1 | aubergine |
4 | tomatoes |
1 tbsp | herbs de provence |
½ bunch(es) | basil, chopped |
3 | eggs |
250 ml | milk |
½ | red chili pepper, chopped |
Instructions
Preheat the oven to 200°C. Put the rice in a casserole dish, pour over the vegetable broth and cook in the oven for 30 minutes.Cut the turkey breast fillets in stripes and sauté in hot oil for 3 minutes. Season with salt and pepper. Remove the meat from the skillet, then sauté the chopped onions in the oil.
Cut the zucchini, aubergine and tomatoes in slices. Evenly divide the vegetable slices and the turkey stripes on top of the rice.
Mix the herbs de Provence with the basil, eggs, milk and chili pepper. Season with salt and pepper. Pour the sauce over the casserole and bake for 50 minutes.
