Tropical fruit pur e with vanilla and coconut cream recipe details
Ingredients
1 | kiwi, peeled and diced |
½ | galia melon, peeled, seeds removed, chopped |
1 ½ | bananas, peeled and sliced |
2 | passion fruits, scooped out pulp |
3 | peaches, halves, canned |
½ | mango, peeled and diced |
some | pineapple juice |
1 | lime, the juice |
1 ½ tbsp | sugar |
600 ml | single cream |
100 ml | cococnut milk |
2 pack(s) | vanilla sugar |
4 tbsp | yoghurt |
2 tbsp | cottage cheese |
Instructions
Combine all fruit pieces (but reserve some for decoration!) in a high bowl. Add sugar and lime juice and leave to soak for 10 minutes. Purée with a hand blender until smooth.Whip the cream until stiff. Mix coconut milk with vanilla sugar. Stir in the yoghurt and cottage cheese and fold in the whipped cream.
Layer in turn vanilla cream and fruit puree in dessert glasses. Garnish with fruit to your liking.
