Tropical strawberry tiramisu recipe details
Ingredients
400 g | strawberries, sliced |
4 tsp | brown sugar |
24 | Ladyfingers |
60 ml | pineapple juice |
60 ml | rum |
250 g | Mascarpone cream cheese |
4 tbsp | whipping cream |
1 tsp | vanilla extract |
1 tbsp | powdered sugar |
cocoa powder, for garnish |
Instructions
In a mixing bowl, toss the sliced strawberries with the brown sugar and set aside.Arrange 12 ladyfinger halves in the bottom of a 12x22cm/5x9inch glass dish. Trim to fit, if necessary.
Combine the pineapple juice and rum in a cup and drizzle some over the ladyfingers; set the rest aside.
In another mixing bowl, combine the mascarpone cheese, whipping cream, vanilla and powdered sugar. Beat until all ingredients are blended and slightly thickened.
Layer half of the strawberries over the ladyfingers, then spread half of the mascarpone cheese mixture over the top and smooth the surface.
Place the second layer of ladyfingers on top, and drizzle the remaining pineapple and rum mixture over them. Place the remaining strawberries on top and spread with the remaining cheese mixture.
Cover with plastic wrap and refrigerate for 8 hours.
To serve, dust with cocoa powder.
