Triple berry streusel coffee cake recipe details
- Ingredients:
- 1-1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1 egg
- 1 stick butter, melted
- 1/2 cup milk
- 1-1/2 cups mix of raspberries, blackberries and blueberries, fresh or frozen
- Ingredients for Streusel Topping
- 1/4 cup chopped pecans or almonds
- 1/4 cup light brown sugar
- 1/4 cup all-purpose flour
- 2 Tablespoons butter, melted
Preheat oven to 375 degrees. Butter a 9-inch square cake pan. In a large bowl, stir together the flour, sugar and baking powder. In a small bowl, mix egg, melted butter, and milk. Stir the liquids into the dry ingredients just until blended. Spoon half the mixture into the prepared pan. Top with the berry mixture and spoon the remaining dough over berries.
In a separate bowl, combine the pecans or almonds, brown sugar, and flour. Stir in the melted butter until the mixture resembles moist crumbs. Sprinkle this mixture over the top of the dough and press lightly.
Bake 25 to 30 minutes until topping is golden brown.
