Traditional provencal aioli recipe details
Ingredients
6 clove(s) | fresh garlic |
1 | egg yolk, raw |
5 tbsp | extra virgin olive oil |
1 | egg yolk cooked |
Instructions
In a mortar, crush the garlic into a fine paste. Add the egg yolks and salt lightly. Mix in the olive oil very slowly until you obtain a smooth paste.Cover and chill well.
Serving suggestion:Serve it with shrimp, crudités (vegetable nibbles) or artichoke leaves.
Note:This Provencal garlic sauce is like a mayonnaise, to be served on a variety of dishes.
