Ingredients
Serves: 4- 1 (19 ounce) package frozen cheese tortellini
- 1/2 pound sliced fresh mushrooms
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 teaspoons butter
- 2/3 cup milk
- 1 (8 ounce) package cream cheese, cubed
- 1 (10 ounce) package frozen chopped spinach, thawed and pressed dry
- 1 teaspoon Italian seasoning
- 1 large tomato, chopped
Preparation method
Prep: 15 mins | Cook: 15 mins1. Bring a large pot of salted water to boil over high heat. Add pasta and cook until al dente, according to package instructions, then drain.
2. While pasta is cooking: melt butter in a large skillet over medium heat. Cook mushrooms, onion, and garlic in melted butter for about 8 minutes to soften, then add milk.
3. When milk is warmed, add cream cheese, spinach, and Italian seasoning. Cook for 1 or 2 more minutes to warm the mixture.
4. Toss pasta and tomato with the cream cheese mixture. Serve.
