Ingredients
175 g | butter |
6 small | eggs, separated |
175 g | sugar |
75 ml | Limoncello or other lemon liqueur or mixture of lemon, lime and orange juice |
175 g | ground almonds |
100 g | chopped whole almonds |
175 g | good quality candied citrus peel, roughly chopped |
25 g | glacÚ cherries, chopped |
grated zest of a lemon and a lime | |
icing sugar for dusting |
Instructions
Melt the butter in the microwave and allow to cool slightly. In a large clean bowl beat the egg yolks with the sugar and liqueur or fruit juices until creamy. In a separate bowl, whip the egg whites until it forms peaks and then fold into the egg yolk mixture, with the liquid butter. Mix in the ground almonds, chopped almonds, grated zest and chopped peel. The mixture should be thick but pourable. If it is too thin, add some more ground almonds.Heat the oven to 180 degrees C and line a 20cm spring-form tin with baking parchment. Pour in the mixture, level and bake in the oven for around 45 minutes to an hour, Test with a skewer into the centre of the torta, which should come out clean. Allow to cool and sprinkle with icing sugar and decorate the top with a few extra pieces of candied peel.
Variations:
Replace the candied peel with 170g of finely chopped good quality dark chocolate to get Torta Caprese.
