Tomato noodle and spinach omelet recipe details

Ingredients
Serves: 4- 8 eggs, beaten
- Salt and pepper
- 1 tablespoon butter
- 8 ounces cooked pasta, chopped into bite-size pieces
- 4 1/2 ounces cooked spinach
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon nutmeg
- 3/4 cup halved cherry tomatoes
- 2 tablespoons grated Parmesan cheese
Preparation method
Prep: 10 mins | Cook: 10 mins1. Preheat broiler to High.
2. In a mixing bowl, beat eggs with salt and pepper. Stir in the pasta, spinach, and nutmeg.
3. Melt butter in a nonstick, oven-safe skillet over medium heat, then pour egg mixture into hot skillet and allow to cook without stirring. As edges set, lift up with a spatula and tilt skillet to let uncooked egg run underneath.
4. When egg is almost set, sprinkle with cherry tomatoes and Parmesan. Place skillet under broiler for 1 minute, or until top is golden-brown. Serve in wedges.
