Ingredients
For the couscous mix: | |
500 g | couscous |
200 g | cherry tomatoes, halved |
1 | cucumber, peeled, chopped |
For the Dressing: | |
1 | lemon, halved |
1 | lime, halved |
60 ml | olive oil |
salt and pepper, to taste | |
For the topping: | |
30 g | fresh basil, chopped |
80 g | Feta cheese, crumbled |
Instructions
Cook couscous until tender. Combine the couscous, tomatoes, cucumber in a large bowl.Squeeze the lemon and lime juice directly into the bowl, add the olive oil, and season with salt and pepper. Toss well.
Add the basil and feta and toss gently.
