Tomato and Spinach Soup recipe

|800 ml||water with vegetable stock|
|450 g||tomatoes, sliced|
|1 clove(s)||garlic, minced|
|4 tbsp||olive oil|
|300 g||fresh spinach, chopped|
|1 dash(es)||nutmeg, ground|
|salt and pepper, to taste|
Cook fresh spinach. Drain and set aside.
Heat the oil in a large pan over medium heat. Add the garlic and the tomatoes and cook, covered, until soft.
Add spinach and water with vegetable stock and cook for another 5 minutes, covered.
Season with nutmeg, salt, pepper and sugar.
If desired, process soup in blender for a smoother consistency.
