Tomato and spinach soup recipe details
Ingredients
800 ml | water with vegetable stock |
450 g | tomatoes, sliced |
1 clove(s) | garlic, minced |
4 tbsp | olive oil |
2 tsp | sugar |
300 g | fresh spinach, chopped |
1 dash(es) | nutmeg, ground |
salt and pepper, to taste |
Instructions
Cook fresh spinach. Drain and set aside.Heat the oil in a large pan over medium heat. Add the garlic and the tomatoes and cook, covered, until soft.
Add spinach and water with vegetable stock and cook for another 5 minutes, covered.
Season with nutmeg, salt, pepper and sugar.
If desired, process soup in blender for a smoother consistency.
