Tokipompos potato onion cheese pie recipe details
Traditional Hungarian meal, usually sold in annual renaissance arts and crafts markets in Budapest. You bake a pastry crust, then top it with mashed potatoes, sour cream, onion, cheese, and bacon.

Ingredients
Serves: 4- 2 potatoes

- 5 cups flour
- 1 ounce yeast
- 1/2 teaspoon sugar
- 3/4 cup warm water
- 1 cup sour cream
- 2 onions, sliced
- 1/2 cup grated cheese
- 1/2 cup grated smoked cheese
- 3 cloves garlic
- 1 cup chopped smoked bacon
Preparation method
Prep: 25 mins | Cook: 30 mins | Extra time: 1 hour, rising1. Add yeast and a pinch of sugar to the 3/4 cup water in a small bowl. Let it stand for a couple of minutes.
2. Mix the yeast mixture with the flour and potato in the bowl. Knead until the dough is smooth and ingredients are fully combined.
3. Let the dough rise, covered and in a warm place, for 60 minutes.
4. Meanwhile, bring a large pot of salted water to boil over medium heat. Add potatoes and cook for 8 to 10 minutes, until tender. Drain and run under cold water.
5. Mash potatoes in a large bowl and mix with 1 teaspoon salt (or to taste) and the flour.
6. Mash the garlic, and mix with the sour cream in a small bowl. Add salt as needed (should taste salty).
7. Preheat the oven to 420 degrees F and coat a baking sheet with nonstick cooking spray.
8. Stretch out the risen dough onto the prepared baking sheet, about 9-inch diameter.
9. Bake the dough for 5 minutes, then remove it and apply toppings. First pour the garlic sour cream mixture on top, and spread it out equally.
10. Then spread the mashed potatoes out onto the crust and sprinkle the sliced onion and bacon over it evenly. Now add the cheese. Put back into the oven and bake for 15 to 20 minutes.
11. Check the bottom of the dough at 15 minutes. It should be light brown when ready.
