A great meal with grilled tofu, spinach, and Indian-spiced rice. All ingredients compliment each other to make an excellent Indian-inspired dinner.

Ingredients
Serves: 2- 1 package of 10 minute instant rice
- 2 tbs garam masala
- 1 tbs olive oil
- 1 package of 16 oz extra-firm tofu
- 1/2 tbs coriander
- 1/2 tbs ground pepper
- 1 lime
- 1 cup baby spinach
- 2 scallions, chopped
- 2 stalks of celery, chopped
- 1/2 tbs cumin
- 1/2 cup tahini
- 1/2 cup plain yogurt
Preparation method
Prep: 20 mins | Cook: 35 mins1. Heat water for rice and cook according to package directions until soft. Add 1 tbs garam masala.
2. Heat 1 tbs olive oil in pan over medium heat. Pat-dry tofu with paper towels until most of the moisture is gone. Cut tofu into 1/2 inch cubes and put into pan. Add coriander, ground pepper, and 1/2 lime, and cook until crispy, stirring occasionally, about 20 min.
3. In a food processor, combine spinach, scallions, celery, 1 tbs garam masala, cumin, 1/2 lime, tahini, and yogurt until smooth. Mix with tofu in pan. Cook for another 5 min. Serve on top of rice.Cook Information Cleanup:
