Toasted coconut bread recipe details
- Ingredients
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1-1/4 cups shredded coconut
- 1 egg
- 1/2 stick melted butter
- 1 cup milk
- 2 Tablespoons coconut extract
Prepare 3 mini-loaf pans with vegetable spray. Toast coconut by stirring constantly in a small ungreased non-stick pan over medium heat. Once it is lightly browned, let cool on paper towels.
Mix flour, sugar, baking powder, salt, and coconut in large bowl. Whisk egg, melted butter, milk, and coconut extract in smaller bowl. Pour liquid mixture over dry ingredients and fold in with rubber spatula just until combined. Remember not to over-mix.
Pour batter into prepared loaf pans. Bake at 300 degrees for 25 to 30 minutes.
Makes: 3 small loaves
