Ingredients
3 medium | hard boiled eggs |
2 tbsp | soft butter |
1 tbsp | cream |
1 tbsp | chopped fresh parsley |
salt and pepper | |
4 slice(s) | toast |
12 slice(s) | cucumber |
Instructions
Pass the boiled eggs through a sieve into a small bowl. Add the butter, cream and parsley and whisk until smooth. Season to taste with salt and pepper and spread the mixture on the 4 slices of toast.Cover with cucumber and serve.
