Toast with Egg Spread and Cucumber recipe

|3 medium||hard boiled eggs|
|2 tbsp||soft butter|
|1 tbsp||chopped fresh parsley|
|salt and pepper|
Pass the boiled eggs through a sieve into a small bowl. Add the butter, cream and parsley and whisk until smooth. Season to taste with salt and pepper and spread the mixture on the 4 slices of toast.
Cover with cucumber and serve.
