Endive boats with smoked salmon recipe details
Ingredients
175 g | smoked salmon, roughly chopped |
2 tbsp | extra virgin olive oil |
1 tbsp | fresh lemon juice |
2 tbsp | fresh chives, minced |
salt and fresh ground pepper to taste | |
4 large | Belgian endives |
30 g | salmon roe |
Instructions
In a bowl, combine the smoked salmon, olive oil, lemon juice, chives and salt and pepper. Stir until well blended. Cover and marinate in the refrigerator for 1 hour.Remove the outer leaves of the endives. Separate from the heart the tender leaves that are large enough for stuffing, 6-8 from each endive. Chill in the refrigerator.
At serving time, gently stir the salmon roe into the smoked salmon mixture. Spoon the mixture into the endive leaves, or “boats”, and arrange on a platter.
