Tilapia with dijon and panko coating recipe details
Ingredients1. Tilapia fillets (4 about 1-1/2 to 2 pounds)
2. fine panko dry bread crumbs (1/2c)
3. light mayonnaise (2tbsp)
4. Dijon mustard (2tsp)
5. dash pepper
6. salt (1/2tsp)
7. onion powder (1/2tsp)
8. dried parsley flakes (1tbsp)
9. paprika (1tsp)
Method of preparation
1. First heat the oven to 400 degrees. Take a shallow baking dish, lightly grease it with non stick cooking spray. Take a bowl, mix mayonnaise and mustard in it and then rub this mixture over the tilapia fillets.
2. In a food processor, mix the panko fine bread crumbs, parsley, paprika, pepper, onion powder and salt in it. Pulse all these 4 to 6 times to combine.
3. Take a wide shallow bowl; put the bread crumb mixture in it. Dip the coated fillets from both sides in this mixture. Now place the coated fillets in the prepared baking dish.
4. Place the dish in preheated oven and bake it for about 15 to 18 minutes or until the fish gets cooked. When the fish gets cooked then it will flake easily with a fork. With a spatula, place the fillets on a plate and serve them.
