Pork roasts quickly on high heat, with flavor from fresh thyme and apricot preserves.

Ingredients
Serves: 6- 2 (1 pound) pork tenderloins
- 2 tablespoons olive oil
- salt and pepper
- 1 cup apricot preserves
- 3 tablespoons sherry
- 1 tablespoon Dijon mustard
- 2 garlic cloves, minced
- 2 teaspoons minced fresh thyme
Preparation method
Prep: 15 mins | Cook: 30 mins | Extra time: 5 mins, resting1. Preheat oven to 450 degrees F.
2. Brush olive oil over pork tenderloins. Season with salt and pepper. Place on a rack in a roasting pan and bake for 15 minutes.
3. While pork is roasting, whisk together the preserves, sherry, Dijon, garlic, and thyme in a bowl. Remove pork from oven and pour the mixture over the meat, then bake for 15 minutes longer until pork has reached at least 160 degrees F.
4. Remove from oven and let stand for 5 minutes to let the juices settle. Serve.
