For serious potato lovers, this hearty breakfast skillet starts with three different types of potatoes. Yeah, you read that right.

Ingredients

Serves: 4
  • 2 teaspoons butter
  • 2 teaspoons olive oil
  • 1 large sweet potato, cut into 1/2-inch cubes
  • 1 large Yukon Gold potato, cut into 1/2-inch cubes
  • 1 red potato, cut into 1/2-inch cubes
  • 1 onion, finely chopped
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 eggs
  • 1/4 cup shredded Parmesan cheese

Preparation method

Prep: 10 mins | Cook: 25 mins

1. Preheat broiler to High.
2. Melt butter with oil in a large oven-safe skillet over medium-high heat. Cook potatoes and onion in hot oil, seasoning with rosemary, thyme, salt, and pepper, until golden-brown and soft.
3. Crack eggs into four corners of the skillet and top with shredded cheese.
4. Broil for about 4 minutes to cook the eggs and melt the cheese. Serve.
