Ingredients
Serves: 4- 2 teaspoons butter
- 2 teaspoons olive oil
- 1 large sweet potato, cut into 1/2-inch cubes
- 1 large Yukon Gold potato, cut into 1/2-inch cubes
- 1 red potato, cut into 1/2-inch cubes
- 1 onion, finely chopped
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 eggs
- 1/4 cup shredded Parmesan cheese
Preparation method
Prep: 10 mins | Cook: 25 mins1. Preheat broiler to High.
2. Melt butter with oil in a large oven-safe skillet over medium-high heat. Cook potatoes and onion in hot oil, seasoning with rosemary, thyme, salt, and pepper, until golden-brown and soft.
3. Crack eggs into four corners of the skillet and top with shredded cheese.
4. Broil for about 4 minutes to cook the eggs and melt the cheese. Serve.
