A Mediterranean mixed grill with something for everyone. Olives, tomatoes and onions share a kabob with halibut. Seasoned butter provides a flavor boost.

Ingredients
Serves: 4- 3 tablespoons olive oil
- Zest and juice of 1 lemon
- Salt and pepper
- 1 pound skinless, boneless halibut fillet, cut into 1 1/2-inch pieces
- 2 tomatoes, cut into bite-sized pieces
- 16 pitted Kalamata olives
- 1 red onion, 3/4 cut into bite-sized pieces and 1/4 chopped
- 1/4 cup butter
- 1 tablespoon minced fresh rosemary
Preparation method
Prep: 20 mins | Cook: 8 mins1. Preheat grill to medium-high heat and lightly oil grate.
2. Pour olive oil and lemon juice into a large plastic resealable bag. Add salt and pepper to taste, then place fish, tomatoes, olives, and the bite-sized pieces of onion to the bag. Seal and turn gently to coat.
3. Melt butter with chopped red onion in a saucepan over low heat. Cook for about 6 minutes, stirring constantly, until butter browns. Then add rosemary, lemon zest, and salt and pepper to taste. Turn off heat.
4. Place fish, olives, tomatoes, and onions onto metal skewers. Set on grill and cook for about 8 minutes, flipping every 3 or 4 minutes, until the fish is cooked through. Serve drizzled with the seasoned butter.
