Ingredients
Serves: 6- 1 pound spaghetti
- 1/3 cup peanut butter, softened
- 2 tablespoons honey
- 1/4 cup soy sauce
- Juice of 2 limes
- 1 teaspoon hot pepper sauce
- 1 clove garlic, minced
- 3 tablespoons vegetable oil
- 2 cups skinned and sliced rotisserie chicken
- 1 cup packed fresh spinach, thinly sliced
- 1/3 cup shredded carrots
- 4 green onions, thinly sliced
- 1/4 cup chopped peanuts
- 2 tablespoons chopped cilantro
Preparation method
Prep: 10 mins | Cook: 10 mins1. Cook pasta according to package directions. Drain, then rinse with cool water.
2. Meanwhile, stir peanut butter, honey, 1/4 cup warm water, soy sauce, lime juice, hot sauce, and garlic together in a bowl. Gradually add the oil, then pour over the noodles in a large bowl and stir well.
3. Top noodles with chicken, spinach, carrots, green onions, peanuts, and cilantro. Serve.
