Texas ranger baked eggs recipe details
- Ingredients
- 7 eggs
- 1 cup milk
- 2 teaspoons sugar
- 4 ounces cream cheese
- 1 pound small curd cottage cheese
- 1 pound Monterey Jack cheese
- 1/4 cup chopped green bell pepper
- 2/3 cup margarine, melted
- 1/2 cup flour
- 1 teaspoon baking powder
- Dash paprika
- Dash ground mustard
The night before: Beat eggs, milk and sugar together. Add cream cheese, cottage cheese, Jack cheese, bell pepper, and margarine and mix well. Mix in flour, baking powder, paprika, and mustard. Spray 3-quart baking dish with Pamnon-stick cooking spray and pour batter in and refrigerate until morning.
