Tasty meat loaf with potato crust recipe details
Ingredients
3 slice(s) | toast |
1 glass(es) | sundried tomatoes in oil |
750 g | minced meat |
2 | eggs |
200 g | Feta cheese, crumbled |
2 | spring onions, chopped |
200 g | potatoes, peeled and grated |
1 | egg yolk |
1 tbsp | tomato puree |
1 tbsp | mustard |
salt and pepper | |
paprika powder | |
nutmeg | |
some | butter |
Instructions
Soak the toast in water. Drain and chop the tomatoes.Place the minced meat into a bowl and add the eggs, tomato purée, mustard and squeezed toast. Season with salt, pepper and paprika powder. Add the Feta cheese, spring onions and sundried tomatoes. Knead until well combined.
Preheat the oven to 150°C.
Place the mince dough into a buttered cake form and bake for 45 minutes. Mix together the grated potatoes and the egg yolk and season with salt and nutmeg. Top the mince roast with the potato and egg mixture. Bake for 15-20 more minutes or until the potatoes are done.
