Tangy courgette soup recipe details
Ingredients
1 large | courgette |
1 large | onion, chopped |
4 sprig(s) | parsley, finely chopped |
1 stalk(s) | celery, finely chopped, with the chopped leaves |
1 l | strong vegetable stock |
200 g | rice, cooked (leftover) |
salt and cayenne pepper | |
100 g | Blue Stilton or Roquefort, crumbled |
2 tbsp | butter |
Instructions
Lengthwise quarter the courgette and cut out and discard the soft flesh. Cut the firm flesh into chunks.In a saucepan, heat the butter and sauté the onions with celery until translucent. Add courgette and stock and bring to a boil. Cook for 15 minutes over medium heat, then purée the soup with a hand blender. Add parsley and rice and season to taste with salt and cayenne pepper. Cook for another minute. Take from heat and stir the cheese crumbles into the soup.
Ladle the soup into warmed soup bowls and serve immediately.
