Tangerine Cream recipe

|650 ml||double cream|
|3 large||tangerines, juiced and zested|
|3 tbsp||caster sugar|
|1 medium||lemon, juiced|
In a saucepan, mix together the tangerine zests and the double cream. Simmer the mixture for 5 minutes over low heat. Set aside and allow to cool for 20 minutes. Remove the zests from the cream.
Reheat the cream and bring close to boil. Add the sugar and the juices. Stir the mixture for 2 minutes, until smooth. Cool for 2 hours.
Pour the cream into glasses, garnish with tangerine slices and serve.
