Tabor city yam bread recipe details
- Ingredients:
- 6 Tablespoons butter
- 1 cup sugar
- 2 eggs
- 1 cup cooked and mashed sweet potatoes
- 1/4 teaspoon dried cloves
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon cinnamon
- 1/3 to 1/2 cup milk
- 1/2 cup chopped nuts

Preheat oven to 350 degrees. Butter 8 x 8 inch loaf pan. Blend butter and sugar to a creamy consistency. Beat eggs in thoroughly. Add to the mixture 1 cup cooked and mashed sweet potatoes. Sift together cloves, salt, baking soda, nutmeg, flour, baking powder and cinnamon. To wet mixture, add dry ingredients alternately with milk. Add nuts. Pour into a loaf pan and bake for 50 to 55 minutes.
Top with caramel icing if desired. May also be baked in lined muffin tins at 400 degrees for 15 to 20 minutes, or in Madeline pan at 400 degrees for 10 minutes. Top with caramel icing if desired. Freezes well.
