Ingredients
50 g | plain flour |
80 g | caster sugar |
25 g | cocoa powder |
2 medium | eggs |
some | icing sugar for dusting |
For the chocolate buttercream: | |
250 g | icing sugar |
130 g | butter |
50 g | chocolate |
2 tbsp | double cream |
4 drop(s) | vanilla extract |
Instructions
Preheat oven to 220°C. Grease a 20 x 30 cm tin, line with buttered greaseproof paper.In a bowl cream together the sugar and eggs, until light and fluffy.
In a separate bowl sift flour and cocoa powder together. Then fold into the sugar and egg mixture.
Pour evenly in to the prepared tin and bake for 8-10 minutes until risen and just firm.
Dust a sheet of greaseproof paper with icing sugar. Turn the sponge upside down onto it.
Roll up sponge with paper still inside and allow to cool.
Meanwhile prepare the Chocolate Buttercream Mixture:
In a bowl cream the butter and sugar until soft. Add the vanilla drops, melted chocolate and enough or cream to produce a spreading consistency.
When sponge cake is cooled, carefully unroll, remove the paper and spread the cake with the chocolate buttercream mixture. Roll up and dust with icing sugar.
