- Ingredients:
- 4 large baking potatoes (2-1/2 pounds)
- 1/4 cup parsley, chopped
- 1 large clove garlic, crushed
- 1/2 teaspoon dried thyme leaves
- 1/4 teaspoons pepper
- 1-1/2 cups (6 ounces) reduced-calorie Swiss cheese, grated
- 1 cup chicken broth
Preheat oven to 400 degrees. Spray 1-1/2 quart baking dish with cooking spray. Pare and thinly slice potatoes. In bowl, toss potatoes with parsley, garlic, salt, and spices. In prepared dish, alternately layer potatoes and 1 cup cheese, beginning and ending with potatoes. Add broth. Cover with foil; bake 30 minutes. Remove foil; bake 30 minutes longer. Sprinkle with remaining cheese; bake until potatoes are tender, about 15 minutes. Sprinkle with additional parsley.
