- 1 tube Ritzcrackers
- 1/2 stick butter
- 2 eggs
- 3/4 cup sour cream
- 1/3 to 1/2 cup coarsely chopped onions or green onions
- 1 Tablespoon butter
- 1/2 cup diced ham or 6 strips crumbled bacon
- 1 cup shredded Swiss cheese
- dash pepper
- 1/2 cup shredded cheddar cheese
Crush crackers in plastic bag and mix with 1/2 stick butter. Press into pie pan. Using same bowl, whisk together eggs and sour cream. Saute onions or green onions in 1 Tablespoon butter and add to egg mixture. Add ham or bacon, Swiss cheese, and pepper. Mix together and put in pie crust. Top with cheddar cheese. Bake at 375 degrees for 30 minutes.
