Ingredients
Serves: 4- 1/2 cup uncooked long grain white rice
- 1 cup water
- 1 pound ground turkey or beef
- 6 medium to large bell peppers
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 (8 ounce) can tomato sauce
- 3 tablespoons brown sugar
Preparation method
Prep: 45 mins | Cook: 30 mins1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
2. Boil the rice with the water according to the directions on the package, about 20 minutes.
3. In a skillet over medium heat, cook the ground turkey or beef until browned.
4. Fill a medium sauce pan with about 3 inches of water and bring to a boil while you remove tops from the bell peppers and clean out seeds and insides.
5. Blanch the peppers by dropping them into the boiling water for 3 minutes – then turn for another 3 minutes; peppers will be translucent.
6. In a large bowl, thoroughly mix the cooked rice, browned meat, Worcestershire sauce, garlic powder, and onion powder.
7. Place the peppers upright in the baking dish and stuff each pepper with the meat mixture – filling each close to the top, but leave the center a bit concave to hold some sauce.
8. Place the the tomato sauce and brown sugar in a small sauce pan and simmer until all of the sugar is thoroughly dissolved; pour over the stuffed peppers.
9. Bake in the preheated oven until peppers are tender, about 30 minutes. Baste every 10 minutes with sauce if desired.
