sweet potatoes with caramelized onion recipe details
Ingredients
60 ml | olive oil |
1 large | onion, chopped |
2 tbsp | fresh thyme, chopped |
4 large | sweet potatoes |
1 tbsp | butter |
60 ml | sour cream or milk |
salt and pepper, to taste |
Instructions
Preheat oven to 200ºC.Heat olive oil in a frying pan over low heat and sauté onion until soft and caramelized, 20-30 minutes, stirring occasionally.
Prick whole potatoes with skins on and bake in a roasting pan for until soft, about 40 minutes. When cool enough to handle peel skins from potatoes and set aside.
When onions are soft, add thymea and season with salt and pepper. Mix well.
Remove onions from pan and process in a blender until smooth.
Heat a medium sized pot and add butter. Add the sweet potatoes and mash with a fork or potato masher. Add the sour cream or milk and then add the puréed onions. Blend with a wooden spoon until fully incorporated.
