Ingredients
6 tbsp | butter, softened |
130 g | sugar |
1 large | egg |
1 tsp | vanilla extract |
180 g | flour |
1 ½ tsp | baking powder |
1 tsp | cinnamon |
½ tsp | nutmeg |
½ tsp | salt |
180 ml | milk |
300 g | sweet potatoes, peeled, shredded |
Instructions
Grease muffin cups. Preheat oven to 170°C.Beat butter and sugar until light and fluffy. Add egg and vanilla and beat until well blended.
In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt. Stir into the butter mixture alternately with milk, mixing just until dry ingredients are moistened.
Stir in sweet potato. Spoon batter into muffin cups, about 2/3 full. Bake for 25-30 minutes. Cool in pan on rack for 5 minutes.
