Ingredients
400 g | sweet potatoes, peeled, cooked, mashed |
350 g | sugar |
120 ml | vegetable oil |
120 g | butter, melted |
4 medium | eggs |
350 g | flour |
2 tsp | baking soda |
½ tsp | salt |
¼ tsp | vanilla |
½ tsp | nutmeg |
150 ml | water |
Instructions
Preheat oven to 180°C.
Combine eggs, oil and melted butter. Beat with an electric mixer. Add eggs, one at a time, beating well after each addition.
Whisk together dry ingredients and add to egg mixture. Add water and stir in sweet potato mash and vanilla. Mix to combine well.
Transfer batter into 3 greased loaf pans.
Bake for about 60 minutes.
