- Ingredients
- 1 cup butter or margarine, softened
- 2 cups sugar
- 4 eggs
- 2-1/2 cups cooked, mashed sweet potatoes
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1/2 cup flaked coconut
- 1/2 cup walnuts or pecans, chopped
Cream butter, gradually adding sugar, beat. Add eggs one at a time and beat after each one. Add sweet potatoes, beat. Combine flour, baking powder, soda, cinnamon, nutmeg and salt. Gradually add to sweet potato mix and beat after each addition. Batter will be stiff. Stir in vanilla, coconut and nuts. Put batter in a well greased tube pan and bake at 350 degrees for 1 hour and 15 minutes, or until it tests done with a toothpick. Cool in pan for 15 minutes, remove from pan and let cool completely. Can also be baked in two standard loaf pans check after 50 minutes and cook till tests done.
