Ingredients
1 tbsp | butter |
3 | leeks, thinly sliced |
1 large | carrot, thinly sliced |
600 g | sweet potatoes, peeled and diced |
2 | large Bramley apples, peeled and diced |
12 l | water |
salt and pepper | |
nutmeg, freshly grated | |
225 ml | apple juice |
255 ml | single cream |
chives, snipped fresh, to garnish |
Instructions
Melt the butter in a saucepan, add the leeks, cover and cook until softened, stirring frequently.Add the carrot, sweet potatoes, apples and water. Season lightly with salt, pepper and nutmeg. Bring to the boil, then simmer with reduced heat for about 20 minutes. Stirring occasionally, until the ingredients are tender.
Transfer the slightly cooled vegetables to a blender and purée until smooth. Return the mixture to the saucepan and add the apple juice. Simmer for about 10 minutes.
Stir in the single cream and simmer again, until heated through. Adjust the seasoning and add the chives to garnish. Ready to serve.
