Ingredients
200 g | raw peanuts |
125 ml | water, split 75/50 ml |
200 g | sugar |
2 tbsp | vanilla sugar |
1 tsp | cinnamon |
Instructions
Preheat oven to 175°. Place peanuts on shallow baking pan, one layer only and roast for 10 – 13 minutes. Keep an eye on them, they can burn very quickly!!Add all other ingredients, except the 50ml water, in a sauce pan and bring to a boil. Add the roasted peanuts to pan and keep cooking and stirring until the sugar is dry again. This can take 15 – 20 minutes.
Now lower the temperature, carefully add the rest of the water, stir until the sugar liquefies again. Now keep on stirring until the sugar is almost dry again, pour the mix on a large baking sheet with a rim. Very quickly separate the peanuts into small clusters. Let cool completely.
For an extra spicy kick you may add a couple of drops Tabasco sauce or a little bit of cayenne pepper with the sugar mix.
