Sweet Little Yeast Rolls with Apple and White Wine Sauce recipe

Ingredients
20 g | yeast |
60 ml | warm milk |
2 | egg yolks |
2 | eggs |
4 | apples, peeled, cored and sliced |
lemon juice | |
pulp of a vanilla pod | |
2 | star anise |
1 stick(s) | cinnamon |
icing sugar | |
130 g | sugar |
220 g | flour |
1 pinch(es) | salt |
90 g | soft butter |
150 ml | dry white wine |
Instructions
Combine 50g of the sugar with the yeast and the warm milk. Sift the flour into a bowl. Form a well in the middle and pour in the milk mixture. Cover and allow to rise at a warm place for 30 minutes.Beat in the eggs, egg yolks, 60g of the butter and the salt. Knead until the dough is smooth and pliable. Cover and allow to rise for another 30 minutes.
Form a roll. Cut the roll into 12 equal parts. Shape to 12 balls. Transfer the balls into 12 small buttered muffin cups (or ovenproof espresso cups). Allow to rise for 15 more minutes.
Preheat the oven to 175°C. Melt the remaining butter and brush the balls with the butter. Bake for 15-20 minutes. Allow to cool, then dust with icing sugar.
Turn the apples in lemon juice. Caramelize 80g of sugar. Add the apples and cook stirring for a minute. Add the vanilla pulp, star anis and cinnamon. Pour in the wine and simmer for 5 minutes. Allow to cool.
Serve the sweet yeast rolls together with the apple and white wine sauce.
