- Ingredients
- 1/2 cup margarine
- 1 teaspoon vanilla
- 1 cup pecan meal or pieces
- 2 Tablespoons sugar
- 1 cup self-rising flour
- Confectioners’ sugar
A tradition in Bonnie’s home and made by her Mom on special entertaining occasions and holidays, this has been a life-long favorite recipe which we now share with guests from time to time. Pecans harvested from the Inn’s five trees are in these tasty, easy-to-make shortbread cookies. (During harvesting years and between November and January, guests are welcome to collect their own pecans at the Inn.) Wonderful with coffee or tea!
Whip margarine and sugar until creamy. Add vanilla, pecans, and flour. Combine all ingredients well. Chill dough in freezer for 15 minutes if time allows. Dust hands with flour and roll dough into 1-inch rounds. Bake at 325 degrees for 20 minutes or until lightly browned. Roll in confectioners’ sugar immediately. Coat in confectioners’ sugar a second time.
