sweet chilli sauce recipe details
Ingredients
250 g | red chilli, chopped |
3 clove(s) | garlic, finely sliced |
100 g | light brown sugar, or a mixture of demerara and caster |
100 ml | water |
2 | white wine vinegar |
Instructions
Hob method:Bring to the boil in a small stainless steel pan and simmer over a moderate heat until soft, about 5 minutes.
Put in a blender and season with salt to taste, about 1/2 teaspoon. Blitz all the ingredients into a paste.
Return to the pan for a further 10 minutes, stirring constantly to prevent from sticking to the pan. Pour into a sterilised jar and allow to cool and keep in the fridge where it will keep indefinitely.
Microwave method:
Chop the chillis and add the garlic ,sugar, water and vinegar into a micro-waveable bowl.
Bring to the boil on medium power for two minutes and then simmer from 4 minutes or until soft.
Put in a blender and season with salt to taste, about 1/2 teaspoon and blitz all the ingredients into a paste.
Return to the bowl for a further 5 mins on simmer.
Transfer to a jar, and allow to cool before transferring to keep in the fridge. The sauce will keep indefinitely in the fridge.
