The Swedish sailor soup recipe is a hearty and comforting dish that has been enjoyed by seafarers for generations. Ingredients

1 tbsp thyme, chopped
1 kg potatoes, peeled and diced
2 large parsnips, peeled and sliced
3  onions, chopped
500 g beef chuck, cut into bite-sized pieces
salt and freshly ground black pepper
2 tbsp butter
2 l beef stock
600 ml dark beer
3  bay leaves
3 tbsp parsley, chopped
9  juniper berries

Instructions

In a saucepan, melt the butter and sauté the onions. Remove from the pan and set aside. Fry the meat until brown and crispy, then take out of the pan and set aside.

Preheat the oven to 150°C.

Layer the beef, onions, potatoes and parsnips into a large and high rimmed casserole dish with a lid and season each layer with salt and pepper. In a separate saucepan, heat the stock with the bay leaves, juniper berries and the beer. Pour over the beef and vegetables. Cover and transfer into the oven and leave there fo 3 hours.

Before serving check seasoning and correct if necessary. Serve sprinkled with fresh parsley.
