- Ingredients
- 4 eggs, room temperature
- 1 teaspoon salt
- 2 cups unsifted flour
- 1 quart milk, room temperature
- 1/4 pound unsalted butter
You might want to add whipped cream for a truly elegant breakfast. Also, a garnish of fresh mint on the top always adds the perfect touch.
Beat eggs slightly with salt. Add milk and flour and mix well. Preheat oven to 425 degrees. Melt butter in 13 x 9-inch baking pan. Have butter and pan piping hot but do not brown butter. Pour the mixture into the hot pan and bake for 30 to 45 minutes. The pancake should have puffed to the top of the pan and be nicely browned when properly done. Serve immediately with maple syrup, Kennebec Inn’s Blueberry Sauce, or crushed fresh fruit in season.
