Ingredients

200 g blueberries
200 g blackberries
200 g strawberries, hulled
120 ml apple juice
240 ml water
60 ml maple syrup
1 tbsp cornstarch
¼ tsp cinnamon
mint leaves, for garnish

Instructions

Place all berries in separate bowls.

Combine apple juice, water and maple syrup in a medium saucepan. Place cornstarch in a small bowl and stir in 60ml of the apple juice mixture. Then add cornstarch back to pan.

Add blueberries and cinnamon and bring to a simmer. Stir in blackberries and strawberries and remove from heat.

Refrigerate and let cool completely. Gently stir in raspberries. Serve in large wine glasses and garnish each portion with a mint leaf.
