Ingredients
For the pastry: | |
350 g | plain flour |
salt and fresh ground pepper, to taste | |
2 medium | eggs, beaten |
350 g | suet |
8 tbsp | fresh breadcrumbs |
milk to mix |
Instructions
To make the pastry:Mix dry ingredients and the suet together in a bowl and fold in the eggs. Make into a light dough with a little milk. Roll out to about ¼-½ inch thick, or 6-12mm, as preferred, and to a rectangular shape.
Spread the desired filling over the major portion of the pastry, leaving a narrow border of ½-¾ inch, or 12-18mm on each side. Dampen and flour a pudding cloth, sufficient to contain the pastry. Roll up the pastry and tie it up in the floured cloth. Place in a steamer, fill the bottom portion with boiling water, add the lid and steam for about 2-3 hours.
Savoury fillings:
Liver and bacon, minced with parsley and a little onion; sausage meat, minced beef, lamb or pork or a combination of 2 or 3.
Sweet fillings:
Jam, golden syrup or marmalade; chopped apples with butter and a little marmalade or quince jelly, chopped peel, raisins and sugar; other fruit.
About this recipe:
Sussex Blankets exist as both savoury and sweet versions; the savoury version is eaten as a main course and the sweet as a dessert, but not at the same meal.
It has a commonality of purpose with the Cornish pasty, other than that the Sussex Blanket was aimed mostly at agricultural workers and the pasty primarily at miners. Each was intended to be a complete meal to be eaten on the job in the 20 minutes then allotted for the purpose, with the meat at one end and the dessert at the other, the two separated by a pastry divider. Over time the pasty has become a meat pie, albeit with potatoes, peas, carrots etc and a gravy contained within. The Sussex Blanket has evolved into two distinct versions, although the fillings can be quite varied, the meat often but not always is partly or wholly leftovers.
