Pork and shrimp combine in these authentic Chinese dumplings. Put ’em in chicken broth to make won-ton soup or eat ’em with the simple sauce below.

Ingredients
Makes: 52 dumplings- 1 pound boneless pork loin chops, cut into bite-size pieces
- 1/2 pound uncooked medium shrimp, peeled and deveined
- 10 whole water chestnuts
- 2 tablespoons cornstarch
- 1 green onion, chopped
- 2 tablespoons rice vinegar
- 1 teaspoon minced fresh ginger
- 1 tablespoon sesame oil
- 1 tablespoon sherry
- 1 tablespoon soy sauce
- 1 (12 ounce) package wonton wrappers
- 12 romaine leaves
- Sauce:
- 1/4 cup soy sauce
- 1 1/2 teaspoons finely chopped green onion
- 1/2 teaspoon sesame oil
Preparation method
Prep: 40 mins | Cook: 40 mins1. Pulse pork, shrimp, chestnuts, cornstarch, onion, vinegar, ginger, sesame oil, sherry, and soy sauce together in a food processor until minced.
2. Fill each wonton wrapper with 2 teaspoons of the mixture. Wipe the edges of the wonton wrappers with water, then fold up into little bags, with the corners pinched up at the top. Twist.
3. Place three leaves in a steamer basket and set a quarter of the dumplings on top. Set over 1 inch of boiling water, cover, and cook for 12 minutes or so until filling reaches 160 degrees F. (Check with an instant read thermometer.)
4. Repeat with the rest of the dumplings, using fresh lettuce each time. Stir sauce ingredients together and serve with the dumplings.
