- Ingredients
- 1-2/3 cups all-purpose flour, sifted
- 3/4 cups brown sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup golden raisins
- 1/3 cup lard
- 2 large or 3 small bananas, ripe (skin should have brown flecks)
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1/4 cup milk (any kind)
- 1 Tablespoon orange or lemon zest
- Fruit, such as apples, cherries, blueberries, or blackberries
Spray a 9 x 5 x 3-inch loaf pan with non-stick cooking spray. In one bowl, blend flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and raisins. In a separate bowl, melt lard and add bananas, egg, milk, and vanilla. Add wet ingredients to dry and mix until totally blended. Add fruit. Pout batter in pan and sprinkle top with cinnamon and brown sugar. Add orange or lemon zest.
Bake at 350 degrees for 1 hour. Can be sliced and wrapped individually then frozen for months. Defrost in microwave. Good for unexpected guests.
