Ingredients
25 g | candied ginger, chopped |
150 g | cold butter |
150 g | soft butter |
225 g | sugar |
350 g | flour |
salt | |
1 pinch(es) | ground ginger |
1 pack(s) | vanilla sugar |
4 | eggs |
50 g | cornflour |
50 g | ground almonds |
½ pack(s) | baking powder |
500 g | strawberries, hulled and quartered |
icing sugar |
Instructions
Combine the cold butter with 75g of the sugar, 225g of the flour, a pinch of salt, the candied ginger and the ground ginger. Knead until crumbly. Cover and place into the fridge.Whisk the soft butter with the remaining sugar, a pinch of salt and the vanilla sugar until creamy. Whisk in the eggs. Sift in the remaining flour, cornflour, baking powder and the almonds. Stir until well combined.
Preheat the oven to 175°C. Pour the batter into a buttered springform tin. Top with the strawberries and sprinkle with the ginger crumbles. Bake for approximately 40 minutes. Allow to cool.
Serve dusted with icing sugar.
