Ingredients
1 bunch(es) | rocket |
200 g | sundried tomatoes in oil, sliced |
1 | red onion, thinly sliced |
120 g | Feta cheese, cut in 2cm cubes |
salt and freshly ground black pepper | |
80 g | black olives, sliced |
1 handful | pine nuts, roasted |
2 tbsp | green pesto |
1 tbsp | white balsamic vinegar |
olive oil, or the oil of the tomatoes |
Instructions
Mix together the pesto, some of the tomato oil and the vinegar. Season with salt and pepper. Mix carefully with the tomatoes, olives, onion and Feta cheese. Allow to marinate for 1 hour in the refrigerator.Arrange the rocket on plates and top with the tomato and feta salad. Serve sprinkled with the roasted pine nuts.
