Ingredients
100 g | thickly sliced bacon, finely diced |
225 g | fresh sheeled lima beans |
3 large | ears of corn, (kernels only) |
225 g | green beans, trimmed and cut into 2,5 cm lenght |
some | salt and fresh ground pepper to taste |
2 tbsp | unsalted butter |
125 ml | milk |
125 ml | heavy cream |
1 pinch(es) | sugar |
Instructions
In a sauce pan, combine the bacon and lima beans with boiling water to cover generously. Cook until lima beans are almost tender, 15-20 minutes. Add the corn, and green beans and salt to taste and cook until the green beans are tender, 6-9 minutes. Drain and let cool.In a sauté pan over medium heat, melt the butter. Add the boiled vegetables and cook for 2 minutes.
In a measuring cup, combine the milk and cream. Add 65 ml of the milk mixture to the vegetables, along with sugar and salt and pepper to taste.
Simmer over medium-high heat, stirring occasionally, until most of the liquid is gone. Continue adding the milk mixture 65 ml at a time and cooking until it is almost gone before adding the remaining liquid. When all the liquid has been absorbed, transfer to a warmed serving dish and serve immediately.
